Can you really make money from working in the fitness industry, is it not true to say that it involves unsocialable hours and working with unmotivated individuals?

The fitness industry is very diverse and while there is a lot of low-paid work, there are also a number of areas in which people can make a decent living. Here are just a few suggestions:
Personal training appeals to me, despite the unsocial hours. Unmotivated? Not a bit of it! Or if they are, I'm not doing my job properly, am I? If you get the right clients - self-employed professionals, part-timers, home-makers and new parents, older and disabled people - you may well find people who are happy to train during the day, though perhaps you won't get those clients if you charge really silly fees. Me, I pitch my fees much higher for unsocial hours, to a point where I'm delighted to work them.
Management is another way to boost your earnings. But obviously, if you're managing a high turnover of demoralised inadequately trained staff in an organisation that pays low wages it's not going to be a bed of roses. So choose carefully!
Specialist roles, like coaching sports teams or working in sports development, can be well paid, especially when you get to the top. Tutoring and organising training courses could also be reasonably paid and need not have antisocial hours at all.
Event management - from ventures like big city Marathons or triathlons through to London 2012 - are going to generate a range of decently paid jobs for those who can prove they can deliver on time and on budget.

i would also take a look at a sales position.
I number of retailers of fitness equipment within the UK have jobs available.

I think the Leisure industry on the whole underpays
This is especially a problem within the chains. There is no incentive to further your skills/qualification base as a trainer, as trainers with basic qualifications get paid a very similar amount to those with what i would class as more advanced qualifications/skills.
By paying trainers a better rate i think the gyms would seea vast improvement in levels of motivation, and also this would be passed on in terms of member retention.
