Low fat museli

Lots of people enjoy crunchy 'granola' style cereal, but a serving of shop-bought sweetened crunchy style cereal can contain as much as 10g fat and 20g of sugar per serving. Try the recipe below for a lower fat, lower sugar alternative that you can tailor-make depending on which dried fruit you enjoy. Spoon the mixture over a small carton of low fat bio yoghurt to create a delicious start to the day. This recipe is so versatile it would also make a wonderfully healthy dessert.

Ingredients (Serves 8)

12oz (360g) rolled oats
2 tablespoons sunflower oil
3 tablespoons clear honey, warmed
3oz (90g) mixed dried fruit, chopped
Try dried cranberries, mango and papaya for a taste of the exotic (or raisins, cherries and sultanas for a more traditional taste)

Method

1) Place all ingredients in a warm mixing bowl and stir with a metal spoon until all the oats are covered with the honey and oil.
2) Turn out onto a thick based, lightly oiled baking sheet, breaking up any larger lumps of mixture if necessary.
3) Place in the bottom of a warm oven (90-100°C / 175°F / below gas mark 1) for about 4-6 hours, stirring from time to time to ensure an even heat and to prevent sticking or browning.
4) Once crispy, remove and allow to cool completely. Store in an airtight container. The mixture will keep fresh for several weeks, if kept free of moisture.
